After a marathon Sunday brunch my sister so nicely hosted, it was difficult to think about the consumption of food required to nourish ones body without the word "gluttonous" popping in my head. Fortunately, my dad came to the rescue last night with a delicious and simple meal we ate together while watching back to back man sports (AFC championship and UFC).
A piece of steak was "wet-aged" in the fridge for over a week allowing the meat's natural enzymes to help break down the connective tissue. The tenderized meat was lightly rubbed with olive oil, pepper & salt, and cooked "à la poêle" or pan-seared on a hot pan. The result was a delicious rare seared steak, thinly sliced to perfection. The simplicity in each bite of meat was complemented with a fresh mix of greens hand picked at the Berkeley Bowl, tossed with fresh squeezed lemon juice and a light vinaigrette. The flavors were simple yet lively and the company was even better.
