Migas Breakfast @ Portage Bay, University District

Among the many great food trucks and restaurants Seattle has to offer, breakfast is a sacred meal that stands on its own two feet (or four in a chair) in this city. My very first breakfast experience in Seattle began at a little restaurant called Portage Bay Cafe in U District, during recruitment weekend. Since then, I've taken nearly every guest and family member that has come to visit. Last week, we had a lab breakfast at the Cafe and sat outside to bask in the summer sun. My friend Brittany suggested the Migas, "A large tortilla stuffed with three chipotle-cumin scrambled eggs, Tillamook medium and sharp cheddar, fresh basil, homemade salsa, sour cream and fresh avocado salsa, and chorizo sausage." I was sold!

This was hands down the best dish I've ever had at Portage Bay Cafe. The eggs were soft and moist, not over cooked but not watery either. The veggies in the eggs added extra crunch while the chorizo was like a blast of salty deliciousness. To top it off, there was enough avocado salsa to enjoy in every single bite. Another great part about Portage Bay breakfast is the hot and spicy, paprika roasted potatoes. A little tobasco/ketchup combo made for the perfect dipping sauce.
