Spicy Pan Roasted Fingerling Potatoes @ Home
The other day, I couldn't find much in my fridge, but when I saw the fingerling potatoes and white onions I knew exactly what to do. Instead of roasting the potatoes in the oven, I caramelized the onions with garlic and brown sugar in a pan, then added the fingerling potatoes with plenty of oil. While the potatoes cooked in the pan, I added paprika, rosemary, basil, various other spices and of course my favorite tunisian spice, harissa. I let the potatoes cook in the pan, covered with a glass top till they were brown. I removed the cover and shook the potatoes allowing them to crisp. Within 30 minutes, I had a delicious bowl of spiced and pan roasted fingerling potatoes that tasted even better with a hickory BBQ sauce
