Caramelized Brussel Sprouts @ Home

I'm not sure what it is about brussel sprouts, but they seem to get a bad wrap. Watching Food Network about a year ago, I was inspired to play around with brussel sprouts. I remembered them looking so delicious on TV, I was sure I could do it even better. Over the past year I experimented and served these in nearly every setting: for my family, for my friends, for a date and for myself. The ingredients are simple and the preparation takes no more than 20 minutes. If nothing else, this cruciferous vegetable contains two chemicals thought to have have potent anticancer and antimicrobial potential: sulforphane [Zhang PNAS 1992], and indole-3-carbinol [Aggarwal Cell Cycle 2005]. The recipe for this dish is found below:
  1. Cut stems from sprouts and slice in half along stem
  2. Add plenty of olive oil and toss in bowl to coat brussel sprouts
  3. In a pan, saute onions or shallots and garlic with olive oil
  4. Add enough chicken broth to coat the pan and keep on medium heat
  5. Next add brussel sprouts face down in pan and cover with lid
  6. After 5 minutes, remove lid and turn up heat to make sprouts crispy
  7. Flip pan once to turn sprouts over and continue browning
  8. Add your favorite spices (rosemary, paprika, basil, herbs de Provence)
  9. Remove from pan and top with freshly grated Parmesan cheese
