Butternut Squash Ravioli: Costco Brand

While I was in DC visiting my brother a few months ago, I tried the most delicious butternut squash ravioli from one of my favorite food markets, Costco. Two weeks ago I bought the Costco sized package, already split into two servings so you don't feel like you have to feed a family of six just for opening it. The ravioli is so tasty on its own that you don't need to add anything special to spice it up. I boiled the ravioli directly out of the freezer for several minutes to soften it up and warm up the butternut squash then lightly browned it on the stove. Once it was "seared" to my liking, I drizzled olive oil, rosemary, pepper and salt on it and it was ready to serve. 

With a nice light salad this was the perfect dinner for two. If you're a fan of butternut squash or ravioli, this is definitely the dish for you. The nice thick pasta enveloping the sweet pureed squash is a perfect combination of sweet and savory. What's best, you can keep it stocked in the freezer until you're ready for this tasty meal.
